Basically, to beat Gogmazios, you need to bring two weapons with Fire and Dragon elements. At the start of the fight, Gogmazios is covered in tar, so you should use Fire-element weapons to weaken it. Once the tar is removed, you can unleash full damage using Dragon-element weapons.
